This turned up for R's birthday, courtesy of a great mate. In her honour we tried the Rock Star. I may not have really connected with the difference 'cave-ageing' makes to a vintage Cheddar, cos there wasn't enough time to think these things through. Cheese can last a while if you give it a chance. But why do that?
